What is Lion’s Mane mushroom?
Lion’s Mane is an edible, wood-decaying fungus belonging to the Hericiaceae family. It naturally grows on dead or dying broadleaf trees and is found across parts of Europe, Asia and North America.
Its scientific name, Hericium erinaceus, comes from words associated with a hedgehog-like appearance—an appropriate description for its mass of soft, hanging “teeth”. These spines are the mushroom’s spore-producing surface and become longer as the fruiting body matures.
Young Lion’s Mane is white to cream in colour. When cooked, it develops a tender, fibrous texture often compared with crab or lobster. This makes it a fascinating home-grown ingredient for pan-frying, roasting, shredding or using as the centrepiece of a plant-forward meal.

Why are scientists interested in Lion’s Mane?
Lion’s Mane contains a chemically diverse mixture of naturally occurring substances. The best known include:
- Beta-glucans and other polysaccharides: complex carbohydrates found in fungal cell walls.
- Hericenones: aromatic compounds identified mainly in the mushroom’s fruiting body.
- Erinacines: cyathane-type diterpenoids studied primarily in Lion’s Mane mycelium.
- Phenolic compounds, sterols and other metabolites: additional components whose quantities can vary with the strain, substrate and growing or processing method.
Hericenones and erinacines are frequently discussed because laboratory and animal experiments have investigated their interaction with pathways involving nerve growth factor (NGF). NGF is a naturally occurring protein involved in the growth, maintenance and survival of certain nerve cells.
That mechanism is scientifically interesting, but it is not proof of a benefit in people. A result in isolated cells may not occur in the human body, and animal research cannot establish that a food will have the same effect in humans. The amount and type of compounds can also differ between fresh fruiting bodies, mycelium, extracts and supplements.
Lion’s Mane, memory and learning: what does the research show?
Researchers have studied Lion’s Mane in relation to cognitive processes such as memory and learning. A small number of human trials have reported findings of interest, but their limitations matter.
A 2009 double-blind, placebo-controlled trial involved 30 Japanese adults with mild cognitive impairment. Participants receiving Lion’s Mane powder showed higher cognitive test scores during the intervention than the placebo group. However, the group was very small, the intervention lasted 16 weeks and scores declined again after it ended. The study is useful as an early signal—not as definitive evidence.
A separate 2019 randomised, double-blind, placebo-controlled study examined cognitive test results in 31 healthy adults over 12 weeks. The researchers reported a difference in one of the cognitive measures, while other measures did not show a clear difference. Once again, the sample was small.
In 2023, a pilot study of 41 healthy adults aged 18–45 explored acute and 28-day effects. It reported faster performance on one Stroop task after a single dose and a non-significant trend towards lower subjective stress after 28 days. The authors described the findings as tentative and called for larger studies.
Taken together, Lion’s Mane remains a subject for further investigation. This research does not mean that Lion’s Mane has been proven to improve memory, make people smarter or prevent cognitive decline. Larger, independently replicated human trials are needed to determine whether the reported findings are reliable, who they might apply to and what form or amount would be relevant.

Claims about a particular vitamin, mineral or nutrient should therefore be based on a verified nutritional analysis of the specific product rather than a generic figure found online.
Lion’s Mane’s cell walls contain beta-glucans, a broad family of polysaccharides found across many fungi. Different beta-glucans have different structures, so research about one isolated compound or product should not automatically be applied to every mushroom, meal or grow kit.
This distinction is important: a fresh mushroom, powdered fruiting body, mycelium product and concentrated extract are not scientifically interchangeable.

How to cook fresh Lion’s Mane
Keep preparation simple the first time so you can appreciate its flavour and texture:
- Brush away any substrate and trim the base. Avoid soaking the mushroom, as it readily absorbs water.
- Tear it into thick pieces or slice it into “steaks”.
- Place it in a dry frying pan over medium heat for a few minutes to release excess moisture.
